Nana’s Uncooked Lemon Slice

A family favourite. Easy to make, no cooking or fussing, tastes fresh and zesty and is nourishing for people struggling to maintain their weight. It is great refrigerated; however we love it straight from the freezer! (Remember to cut it into squares before freezing).

Method:

Serves: 16 squares
Preparation: 10 minutes

Combine melted butter, condensed milk and the juice and rind of the lemon in a large bowl. Add crushed biscuits and coconut and mix with a spoon.

Press into a slab tin.

Combine icing sugar with lemon juice and enough milk to form a thick icing sugar. Spread over slice and top with coconut.

Refrigerate and when set cut into squares.

Ingredients

  • 1 packet Milk Arrowroot Biscuits (crushed)
  • ½ tin condensed milk
  • ½ cup desiccated coconut
  • 125g melted butter
  • Juice & rind of 1 lemon
  • 2 tbsp L.S.A mix

Optional: For those at risk of malnutrition 2 tbsp Hospital Grade Sustagen (vanilla flavour) can be added to fortify it further with macro and micronutrients.
